Alpha-galactosidase
α-galactosidase is an enzyme used to hydrolyze or break α-1, 6-glycosidic bonds into galactosyl oligosaccharides (α-galactosides), liberating simpler, more usable sugars and eliminating its anti-nutrient effect. Thus, it improves the utilization of the energy and proteins in feedstuff.
One unit (U) of α-galactosidase is defined as the quantity of enzyme, which liberates 1μmol P-nitrophenol in one min at 37ºC and pH5.0.
Operating Temperature: 30ºC-90ºC(Effective), 50-65(Optimum)
Operating pH: 3.5-7 (Effective), 4.5-6(Optimum)
